Sauteed Vegetable Salad Recipe

 

It has been my goal to eat healthier. Being honest with y'all I have not done a good job the past couple of weeks with my goal, but I am doing better than I was.  One day I decided to make a salad. It tasted a lot better than it looks. 

 

 

I washed spinach, and a cucumber. I sliced the cucumber and salted it. I left the skin on as a preference. You can peel the skin off if you like.  After I prepared the spinach and cucumbers I cut up my vegetables.

 

 

I cut up sweet peas, orange and red sweet peppers, asparagus and added some baby tomatoes. I used olive oil, and added salt and pepper to saute my veggies. 

 

I did not want to wash a lot of dishes so I used a styrofoam plate. 

 

 

I added shredded cheese and enjoyed my lunch!

A Dollar General Dinner

Saturday three or four weeks ago we were all tired from working around the house, no one wanted to go to the grocery store in the next town to get groceries for supper.   We don't keep the refrigerator or freezer stocked right now because we are making trips back and forth from one house to the other moving. We buy what we need for a the time we will be in whichever place.   This trip we had not gone to the grocery store yet. 

I needed bubble wrap lined mailers to package orders, so my Mama and I went to the Dollar General that is five minutes give or take a few from our house. 

Did you know you can buy food to fix an entire meal there? I am not talking about off brand groceries either.   We bought Tyson Chicken, Kraft Pasta Salad, name brand green beans, a packet of gravy mix and hot dog buns to toast in the oven.  

Next time you don't feel like going to the grocery store for lunch or supper, check out your local Dollar General.
